Dishes that are traditionally served vegan

Dishes that are not vegan by default, but can be made so, by asking to remove or change part of the ingredients.
Stuffed veggies filled with tomato sauce, rice and herbs. To veganize: ask to cook in water instead of meat broth and for no meat filling
Crushed semolina with cooked vegetables and sometimes meat. To veganize: ask for no meat or meat broth
Jute and corchorus leaves with garlic. To veganize: ask for no meat broth
Eggplant cooked with tomato sauce, onion, garlic, pepper, and meat. To veganize: ask to make without meat
